When looking for a healthy dinner idea for kids, sweet potatoes wedges are a great choice.
They’re sweet. They’re healthy. It’s a hit. Kids universally love sweet potatoes when they are jazzed up. This dish can be a side dish or a lunch option. While it is super easy to prepare, you will want to plan ahead at least 45 minutes, as these do take some time to cook and caramelize in the oven.
Sweet potatoes are antioxidant rich tubers that are loaded with vitamin A through beta-carotene. Vitamin A is excellent for immune support, bone growth, healthy eyes, organ support, and more! By consuming the fat-soluble vitamin A in your diet, it is more bio-available, which means your body is better able to absorb it. Additionally, sweet potatoes are a good source of manganese, vitamins B6 and C, potassium, and fiber making it an easy, healthy dinner for growing kids.
All you need to do to prepare is preheat the oven to 400 for small wedges and 450 for larger fries. Chop the potatoes into either wedges or fries (skin on or off), douse the pan with coconut oil (or olive oil, but we prefer the sweetness of coconut oil for this dish), toss in your favorite seasoning (we use Italian seasoning and a dash of salt and pepper), and cook about 40 minutes. During the last ten minutes, coat them with sweet agave or honey. The agave will caramelize beautifully! Enjoy. 🙂

Coconut oil (unrefined for flavor)
Seasonings-salt, pepper, Italian
Agave or Honey
Extras or Substitutions:
Butter
Olive oil
Instructions:
- Preheat oven to 400 for small wedges or 450 for thick fries
- Line a cookie pan with aluminum foil (if you want easy cleanup)
- Smother in coconut oil/olive oil/or butter
- Season with salt, pepper, Italian (or whatever seasonings you prefer)
- Cook for about 40 minutes
- Drizzle with honey or agave ten minutes before done and allow caramelizing
