Sometimes, the thought of what to make for lunch feels downright daunting. When the summer heat is appetite-suppressing and the motivation for bikini-wearing is strong, something light is in order!
This is the time that I like to to open the fridge, peruse the spice rack, and look on the counter to see what interesting things I can throw together to create something satisfying and unique.
Hence– the Butternut Squash Summer Medley was born! The colors were rich. The Italian dressing was flowing. It was beautiful day.
Ahh, alas, summer is in the air!
Ingredients:
1 butternut squash “noodled”
Butter
Olive oil
Italian Dressing
Handful of fresh, organic spinach
Mushrooms (any variety you like)
Seasonings-salt, pepper to taste
Instructions:
- Heat a non-stick pan and coat with butter and olive oil
- Toss in butternut squash noodles and mushrooms
- Let cook 3-4 minutes on medium/high
- Toss in a handful of spinach
- Add a dash of Italian dressing
- salt and pepper to taste
- Serve
