A Kid-Friendly Meal-Taco Salad

If you are looking for a kid-friendly meal that parents enjoy too, you will score big with a healthy taco salad. Taco salad night is a major hit with my kids, and they always light up and thank me!   Just saying “Taco Tuesday” makes everyone cheer (even on “Taco Tuesday-Friday,” my kids are weird and get excited over the little things- like alliteration…)  It’s one of the few nights that no one complains.

When I’m in a rush, nothing beats this crowd-pleaser.  I love it because it’s quick and easy, and the clean-up is a breeze.  I can even pull this one off with ease if I forgot to thaw ahead of time. (Thank you Instant Pot).

I also just love anything resembling a Mexican dish, and I can have lots of fun with this one on my own plate. While my kids and husband get the more bland versions of this kid-friendly meal, I can jazz mine up with salsa verde, sour cream, black beans, or any other dressings and garnishes. 

If you use fresh organic ingredients, you can feel pretty good about a healthy meal in a zip.

Ingredients:

Organic Nachos (we like these)

Shredded Chicken or Ground Beef

Shredded Cheese (any variety you like)

Taco Seasoning

Extras:

Sour Cream

Cilantro

Black Beans

Salsa

Instructions:

  1. Bake chicken in the oven at 350° or  cook in the crockpot on low 6-8 hours
  2. Shred chicken with a fork or use a food processor 
  3. Toss in a packet of taco seasoning or make your own with organic ingredients you trust. (click here to make your own)
  4. Spread nachos on a small plate. 
  5. Sprinkle with lots of cheese and microwave for 15 seconds
  6. Top with chicken
  7. salt and pepper to taste (add other seasonings)
